It's eggplant season! 🍆 I rarely cook eggplant, I don't remember having eaten eggplant with my parents. It's a vegetable that I don't think is very popular. As I received this vegetable in my SecondLife basket, I had to brainstorm and find a recipe that was going to please me.
I finally decided to roast the eggplants in the oven and eat them in a buddha bowl. 🥗 I liked it so much that I ate it all week long!
For 4 portions
Ingredients
- 1 large eggplant
- 2 tablespoon of salt
- 2 tablespoon of soy sauce
- 1 tablespoon of maple syrup
- 1 tablespoon of lemon juice
- 2 tablespoon of olive oil
- 2 tablespoon of nutritional yeast (nooch)
Preparation
- Cut the eggplant into 1/3 inch thick slices and place them side by side on a clean tea towel.
- Sprinkle salt on each side of the eggplant slices.
- Leave the eggplant to disgorged of its water for 15-30 minutes.
- Meanwhile in a large bowl put the soy sauce, maple syrup, lemon juice, olive oil and nutritional yeast and mix everything together.
- After 15-30 minutes, wipe off the water and some of the salt from the eggplant with a clean tea towel.
- Preheat the oven to 350 °F.
- Cut the eggplant slices into strips. (optional)
- Line a baking sheet with a silicone sheet or parchment paper.
- Place the eggplant strips on the baking sheet.
- Bake for 15-20 minutes or until the eggplant is roasted.
