Refreshing Cantaloupe and Cucumber Salad Recipe

👩🏼‍🍳 My greatest wish during the summer, in the kitchen, is to use oven cooking as little as possible. Often, I still do quite well! 🙂

When I received my 🍈 SecondLife 🥒 basket and it contained a cantaloupe and a cucumber I thought to myself that it would be interesting to make a refreshing summer salad and of course without baking in the oven.

In addition, what better than to add the grilled Halloounie tofu to to make a nutritious, delicious and flavorful meal?

for 4 portions

Ingredients

  • 1 grilled Halloounie tofu (prepared in advance)
  • 2 tablespoons of olive oil
  • 1 cup of quinoa
  • 2 cups of water
  • 1 small cantaloupe
  • 1 cucumber from the garden
  • 5-7 basil leaves
  • 5-7 mint leaves
  • 3/8 cup of olive oil flavored with shallot *
  • 1/8 cup of balsamic vinegar flavored with pear and blackberry *
  • Salt and pepper
  • 1-2 green onions

Preparation

  1. Prepare the grilled Halloonie tofu in advance, without grilling it.
  2. In a rice cooker, put the olive oil, the quinoa and the water and let cook and temper.
  3. While the quinoa is cooking, remove the peel from the cantaloupe using a peeler. Cut the cantaloupe in half and remove the seeds. Finally, cut the cantaloupe into thin wedges and put them in a large bowl.
  4. Cut the cucumber lengthwise, then cut crosswise to obtain half moons. Put everything in the same bowl as the cantaloupe.
  5. Cut the basil and mint into a chiffonade. And mix everything with cantaloupe and cucumber.
  6. Cut the green onions into thin rings and set aside.
  7. In a small container, combine olive oil, balsamic vinegar, salt and pepper to make a vinaigrette.
  8. Pour half the vinaigrette over the cucumber and cantaloupe salad and mix. Pour the other half into the tempered quinoa and mix.
  9. Grill the Halloonie tofu and cut it into strips.
  10. On a plate, place 1/4 of the quinoa preparation, on top of it place 1/4 of the cantaloupe and cucumber salad, 1/4 of Halloonie tofu. Sprinkle the dish with green onions then serve.

** An unflavored olive oil or balsamic vinegar can do the job just as well. It is even possible to add more green onion in the recipe to put it directly in the vinaigrette. Also, a balsamic vinegar flavored with another fruit such as strawberry can work very well.
